Scrumptious Sunday / Summer Salads


Overnight Salad


1 head lettuce
1 head broccoli
1 lb. Bacon, fried crisp and crumbled
1 onion, minced fine

Dressing
1/4 cup sugar
2 cups mayonnaise
1/2 tsp. salt
1/2 tsp. pepper
1 cups parmesan cheese (I used maybe a cup and a half)
Tear lettuce into bite size pieces and place into bowl. Cut broccoli into bite size pieces and place on top on lettuce. Next add onion and then the bacon. Mix dressing ingredients together and spread on top of salad. Cover tightly and chill overnight. Mix right before eating.

Scrumptious Sunday / special for Mother's Day

Scrumptious Sunday
This was my Mom's favorite salad.

TOMATO - MOZZARELLA SALAD

1/2 lb. fresh mozzarella cheese
1 head lettuce
3 lg. tomatoes, sliced or cut up
1/4 tsp. salt, optional
Vinaigrette dressing (recipe follows)

Slice cheese into 12 slices, 1/8-1/4 inch thick. Cut 12 rounds from cheese using a 2-2 1/2 inch cutter. Set aside.

Line serving platter with lettuce. Arrange tomato slices on lettuce and sprinkle tomatoes with salt, if desired. Top each tomato slice with a cheese round. Spoon dressing over salad and serve immediately.

VINAIGRETTE DRESSING:

1/2 c. olive oil
1/3 c. white wine vinegar
1 1/2 tbsp. chopped fresh basil or 1 1/2 tsp. dried basil
1/4 tsp. salt
1/8 tsp. ground pepper

Combine all ingredients in a jar; cover tightly and shake vigorously. Chill thoroughly.

Tasty Tuesday


Mixed Vegetable Salad (borrowed from allrecipes.com)

1 (10 ounce) package frozen mixed vegetables
1 (15 ounce) can kidney beans, rinsed and drained
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green pepper
3/4 cup sugar
1/2 cup vinegar
1 tablespoon cornstarch

Cook the mixed vegetables on the stove or in the microwave until crisp-tender. Drain; place in a large bowl. Add kidney beans, celery, onion and green pepper. In a saucepan over medium heat, bring sugar, vinegar and cornstarch to a boil, stirring constantly, until thickened. Cool slightly. Pour over vegetables and toss. Refrigerate.
We tried this and it was SO good!

Broccoli-Cauliflower Salad



Broccoli-Cauliflower Salad


1 cup broccoli florets

1 cup cauliflower florets

1 med. size red onion chopped

1 cup shredded Cheddar cheese

6 slices bacon

1 cup mayonnaise/Miracle Whip

1/2 cup white sugar


DIRECTIONS


Chop bacon....i cut mine with scissors...cook till crisp. In a bowl mix MAYO, SUGAR and in another bowl mix BROCCOLI, CAULIFLOWER, CHEESE,ONION and BACON then dump MAYO MIX in same bowl with BROCCOLI MIX stir together stick in the fridge or serve right then.

**this is one of those that you could even make the day before because it only gets better with time...the more people you have to feed the more veggies you cut and clean...and then just make enough mayo/sugar mix to go with it I would also use more bacon for it and a whole bag of cheese** For a "Lite" dish, use bacon bits and lite or fat free mayo.
