1. Fruits and veggies. Do you prefer them peeled or not?
Depends on the fuit or veggie. Usually I leave them unpeeled.



2. What’s your favorite fresh fruit or vegetable smell?

4. Share the recipe for the dish that you love to smell cooking in your oven

Applesauce Spice Cupcakes

I began making these moist cupcakes in grade school and still bake them.

INGREDIENTS:
1/3 cup butter, softened
3/4 cup sugar
2 eggs
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
3/4 cup applesauce

Cream cheese frosting

DIRECTIONS:
In a mixing bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine dry ingredients; add to creamed mixture alternately with applesauce.
Fill greased of paper-line muffin cups two-thirds full. Bake at 350° for 25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to a wire rack. Frost cooled cupcakes. Yield: 1 dozen.

#1. Name one cookbook, cooking website or food blog that you frequently use.
I have a cookbook I've used for years and it's still my favorite. You can order it by clicking on the picture.
Photobucket 738-page book ...still only #14.00... They have different ones but the yellow one is the first and the best!

#2. Do you watch any cooking shows on tv? Which ones?
I like Paula Deen, and of course Top Chef and Next Food Network Star.


#3. Are you in a cooking rut? Name a food or dish that you’d like to find a recipe for.
Hubby and I were just talking about this. We are so tired of eating the same old thing week after week. Would love to try many new dishes, not one in particular.


#4. Share a recipe created by somebody else that you haven’t tried but would like to.

Hootin Annie's ORANGE SHERBET SMOOTHIE

2 cups Tampico™ Citrus Fruit Punch
3 Large scoops of non-fat Orange Sherbet
Juice of one large orange
[1 tsp of grated orange rind -optional]
2 cups ice [more may be added to thickness desired]

Blend ingredients until slushy. Serve immediately.
Yield: 2-3 servings

Four Foods on Friday / Chicken Kabobs



1. What is your favorite food that is cooked on the barbeque?
Steaks and kabobs

2. What veggies, if any, do you cook on the barbeque?
Grilled corn, vege kabobs, potatos

3. Tell us a little about your barbeque habits. Who grills, how often, what months, etc.
In Phoenix we grilled all year long. Here in GA we drill in the summer til about Sept. Hubby grills most of the time, but I can also. He is just better.

4. Share a barbeque recipe.
CHICKEN KABOBS - FOR THE GRILL
8 slices bacon, cut in half
4 chicken breast halves, skinned & boned
1 (15 1/2 oz.) can unsweetened pineapple chunks
1 lg. onion
2 lg. green peppers
16 cherry tomatoes
1/2 c. white wine (opt)
3 tbsp. Worcestershire sauce
1/8 tsp. black pepper

Cook bacon for 1-3 minutes or until transparent. Drain and set aside. Cut each chicken breast into 4 strips. Drain pineapple chunks, reserving juice. Combine chicken, pineapple chunks, bacon, onions, green pepper and cherry tomatoes in a shallow dish.
Combine 1/2 cup reserved pineapple juice and remaining ingredients and stir. Pour marinade over mixture. Cover. Chill at least 8 hours, stirring often.
Drain and reserve marinade. Wrap a piece of bacon around each piece of chicken. Alternate chicken with vegetables on skewers. Grill about 6 inches from medium hot coals for 20 minutes or until done, turning and basting often with reserved marinade. (4 servings.)

1. What’s your favorite white beverage? If you don’t have one, what’s your favorite beverage with something white in it?
White Grape juice
2. What’s your favorite white gravy, sauce, condiment, dressing or topping?
Ok, having grown up in the South, I love good ole gravy and biscuits.
3. What’s your favorite white item from the refrigerated section?
The icing on refrigerated cinamon rolls
4. Share a recipe for something white.
BEST CREAMY, EASY RICE PUDDING!
3 cups water
1/4 teaspoon salt
1 1/2 cups white rice
4 cups 1% milk
2 cups half & half
2 whole eggs
4 egg whites
1 teaspoon vanilla
1/4 teaspoon salt

Bring 3 cups water and 1/4 teaspoon salt to boil in a 4 quart pot, stir in 1 1/2 cups rice. Cover and simmer until water is absorbed, about 15 minutes.

Stir in 4 cups milk, 2 cups half and half, 1 1/2 cups sugar and heat up until steamy (stirring continuously) then reduce to low heat, cover, until mixture looks like thick soup, about 1 hour.
Whisk 2 eggs, 4 egg whites, 1 tablespoon vanilla, and 1/4 teaspoon salt in separate bowl then add to rice mixture. Do not let boil; stir about 1-2 minutes on low heat so temperature reaches 160-170 degrees. Remove from heat, may optionally add 2/3 cup raisins.

Place rice pudding into Tupperware, cover surface with plastic wrap (adds to creaminess and prevents thick surface), cool about an 1 hour.
Sprinkle servings with generous amounts of cinnamon as option. Makes 3 quarts.
