In The Comfort Table, Katie dips into her archive of family recipes and updates all the classics from her childhood growing up in West Virginia, and also creates some inventive new favorites. This mouthwatering assortment of more than 125 recipes includes Southern staples like Fried Green Tomatoes, Chicken and Dumplings, Peach Cobbler, Meatloaf, and the quintessential Pulled Pork BBQ.
When I looked closer at a photo of her with who I assumed was her dad, a gray-bearded baldie. Is that... Billy Joel? Ahhh, I see. She "is" Mrs. Billy Joel. The book has chapters on starters, salads, soups, entrees, side dishes, breads, breakfasts, desserts and drinks, plus a section with tips on entertaining. A foreword by Paula Deen starts things off (she also contributes her recipe for Grandmother Paul's Red Velvet Cake). Especially good recipes include the peach cobbler and cinnamon rolls. Nothing is too fancy or difficult, and there is a photo of the recipe on every second or third page spread.

My kids love the simplests meal I can possibly make! It's a boneless beef roast I sprinkle with a packet of Lipton Onion Soup Mix. 300 degrees for 3 hours in a Pyrex covered with foil, the house smells amazing, and the meat is fork-tender. Go figure! My family loves tater tot casserole, and it doesn't get any easier than that. Take 1 1/2 lbs. of ground chuck, mix in 1/4 c onion flakes, garlic salt, pepper, 1 c tomato sauce, 1 egg, 1 c oatmeal & mix together. Pat into a 9 x 13 pan, top with a bag of tater tots, 2 cans of cheddar cheese soup. Bake about an hour & voila, supper!

"Rice-a-Roni Meatballs" were a favorite family dish growing up. They are simply large meatballs made up of a mixture of ground beef, chick, or turkey and beef rice a roni. Put them in a high-sided skillet and simmer them in broth. They are wonderful!
My family's favourite dish of all time was "MOCK DUCK" with Yorkshire Puddings, Roast Potatoes and veggies.
Mock Duck is a rolled, stuffed, seared and roasted Flank Steak that makes its own base for gravy. (its roasted in a cast iron pan)

My mom has a recipe for devil's food cake that has been passed down from generation to generation which is out of this world!
I grew up in a family with 6 younger siblings. Each one of us has something special we loved. mine was a quiche with spinach adn Knorr Leek soup mix. One of my sisters loved lemon squares and to this day it is still her favorite treat.

Our favorite family recipe is my mom's shrimp and pasta salad. My whole family loves it. It is super easy to make too. Cook 2lbs macaroni,drain and cool, add 1 package frozen cooked shrimp (tails removed, thawed), two cans sliced black olives (drained), 1-8 oz pkg of cheddar cheese cut into small cubes and 1=16 oz bottle of miracle whip. Season with salt & pepper and refrigerat for 4 hours before serving.

We love steak, chicken or salmon soaked in Yoshidas and diet coke over night and then grilled. The diet coke makes the meat tender.

My entire family loves my taco dip, it really is more like a meal than an appitizer, I get asked to make it for every family function, also on mom nights out, my husband's co-workers request it for work functions, it has become my signature dish. Last year instead of a birthday cake my oldest daughter wanted a mini taco dip.

I love hot and spicy chicken thighs. I marninade them in franks buffalo wing sauce. Put in the oven at 400 degrees for half an hour. my boyfriend eats four helpings of that!

Guacammole, really simple, for each person one avocado, and one for the bowl. For each avocado, 1/4 teaspon sour cream, 1/8 teaspoon garlic salt, 1 teaspoon hot sauce (we use Pace chunky) and three drops lemon juice. Mash together. Serve with chips, more hot sauce, chopped cilantro, diced onion, diced tomato, cheese shreds (I arrange these arounf the bowl of guacamole). Yumm--goes fast!

Boiling a couple of pieces of chicken and chopping up some veggies for a quesadilla... using a quesadilla maker! I think I got it for like $20 at Kohls and Hubby LOVES it. He wants 'em at least one a week! Easy enough for me :)

My favorite family recipe is called Roman Supper. It's basically spaghetti noodles layered with meat sauce then cottage cheese and then mozzarella. Repeat the layers and top with parmesan cheese. Bake at 350 about 30 minutes or until heated through and cheese is bubbly. Delicious!

I think the recipe that everyone in our family likes is my sister's chocolate chip oatmeal cookies. They are bigger than a fist, and one cookie will last you about a week. :-)
My favorite family recipe is my grandmother's egg balls. She is 100% Italian and she said that when she was little and you couldn't have meat on Fridays, this is what they made in leu of meatballs. I don't have the exact recipe, but the ingrediants are grated parmesean cheese, eggs, and breadcrumbs. You drop them by the tablespoon in boiling tomatoe sauce and then serve. They have a spongy consistancy and I could eat a million of them. These are great for vegetarians!

The simplest meals are the best...like Baked Spaghetti paired with a green salad and finished with a piece of rhubarb cake topped with a dollop of whipped cream.
My favorite family recipe is actually a breakfast recipe. I make it for special occassions for the kids. Birthdays, first day of school, last day of school, or any other reason to celebrate. I make Gingerbread Pancakes with Lemon Sauce. They love these pancakes and have ate them since they were about 3 years old.
My children's most favorite meal has to be my chicken pot pie. I cook the chicken,shred it,and use the broth added to butter and flour to make a thickened sauce. I sautee onions,celery,carrots,and pieces of potato. I stir in frozen peas. I use a simple refrigerated pie crust to make the crust. The thing that gets them to eat it in the first place is the fact that I take the 2nd crust in the box and cut out shapes depending on the season or occassion to put on top of the pie. They really get a kick out of it and really enjoy eating it!!!

I have made Lasagne Napoli for over 43 years and my family loves it just much today as back then.
All my meals are simple - ususally made in the crock pot. My favorite is making roasts because they are so easy, nutritious and taste great.

My family loves my Swiss steak served with "real" mashed potatoes (I NEVER use instant!). Another favorite is my fried pork chops -- it is all in the seasoning! Did I mention my beef - vegetable soup that has everything but the kitchen sink in it? Oh, and don't forget my hearty beef stew -- or fresh green beans cooked with bacon and new potatoes. Pumpkin Bars Recipe
Description: Great as a dessert or snack.
Ingredients:
2 cups flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
4 eggs, beaten
1- 16 oz. can pumpkin
1 1/3 cup sugar
1 cup cooking oil
Preparation Directions:
Pre-heat oven to 350 degrees.
Combine beaten eggs, pumpkin, sugar and oil, beating until well mixed.
Add dry ingredients, and mix together until smooth.
Spread batter into an ungreased baking pan (15" X 10" X 1")
Bake in oven for 25-35 minutes.
Cool and frost with cream cheese frosting.
Cream Cheese Frosting:
1. Beat together the ingredients below until light and fluffy:
1- 3 oz.. package of cream cheese
1/4 cup margarine
1 teaspoon vanilla.
2. Add 2 cups powdered sugar, beating until smooth.
3. Spread cream cheese frosting over cooled cake.
4. Sprinkle with chopped nuts.
I inclination not concur on it. I over polite post. Particularly the designation attracted me to be familiar with the whole story.
