Super Bowl Chili


2 t. olive oil
1 large onion- diced
2-3 cloves garlic- minced
2 lbs. lean ground beef
1 lg. can Italian ground peeled tomatoes
1 sm. can tomato paste
2 pkgs. powdered chili seasoning
1 t. chili powder
1 t. cumin
1 can dark red kidney beans, drained
1 can chopped chilis
salt and pepper, to taste

I add 1 can corn, drained to mine, because it adds a touch of color and we like it, but it is optional.
In a large soup pot, sauté onions and garlic in oil until soft. Add ground beef and stir until meat is browned. Add canned tomatoes, beans, and seasonings, cover pot, and simmer slowly about 1 hour. Add kidney beans and chilies and cook another 5-10 minutes. Even better the next day!
